Sundried tomatoes lose up to 90 percent of their moisture when exposed to the sun from roughly four to ten days depending on humidity levels and cloud cover. Most commonly, the tomatoes are treated with sulfur dioxide before drying in order to stabilize the color and serve as a preservative. This process can leave an aftertaste which is easily discernible.
The natural julienne sundried tomatoes we sell are processed without sulfur dioxide. This means they have slightly darker color but retain a much better, characteristic tomato taste profile.
