Raisins are a type of dried grape produced and eaten worldwide. They are eaten fresh and used in cooking and baking and come from a variety of types of grapes. Raisins have a high sugar content and can be produced by sun drying, shade drying, or mechanical drying.   Not surprisingly, mechanical drying is the most common method for commercial consumption.  Thompson Seedless grapes are used for these raisins.

Golden raisins are treated with sulfur dioxide after drying to give them their characteristic golden hue.
